Mexican Quinoa and Lentil Powerhouse

This one is super easy:

1 cup lentils
1 cup quinoa
1 can black beans
1 jar hot salsa
1 packet taco seasoning
5 cups water

Bring it all to a boil- cover and simmer until water is absorbed. Voila! 4 protein rich meals

As always, make sure to rinse your quinoa before cooking

I made this earlier this week and added green pepper, onion, and some spinach to increase the veggie content. It's great!

Oh.

Not knowing this little nugget explains why restaurant quinoa dishes always tasted great while my home-cooked quinoa (until last night) didn't taste very good. Thanks!
